Happy Tuesday, everyone! My name is Gayle and I blog over at Pumpkin ‘N Spice. I’m honored to be sharing one of my favorite holiday recipes with you today. Jen is one of the sweetest bloggers I know, and her blog is a favorite of mine. I look forward to her delicious recipes every week, so when I was asked to share a treat with you, I practically jumped at the chance!
Besides cookies, hot chocolate, and cakes, one of my favorite holiday treats are truffles. And not just any truffle, but one made with a rich, decadent mixture that practically melts in your mouth. Know what I mean?
Chocolate Peppermint Truffles Recipe
Those store bought truffles are delicious, but I love the homemade ones even more. My aunt used to make white chocolate truffles when I was younger, and I eagerly grabbed two (or five) to savor. The smooth white chocolate and creamy texture was a treat that I looked forward to every year.
So when I was thinking of what holiday goodies to share with you today, these Double Chocolate Peppermint Truffles immediately came to mind. These truffles are filled with creamy chocolate, hints of peppermint, and coated with smooth white chocolate. It’s a fast and easy holiday treat that is sure to be the hit of your parties or get-togethers.
Chocolate Peppermint Truffles Recipe
Besides the deliciously smooth taste, these Double Chocolate Peppermint Truffles are a breeze to whip up. With just about 10 minutes of prep time and four ingredients, you can have this treat ready to serve in no time.
To start, you’ll bring some heavy cream just to a boil, and then remove it from the heat. Add in some semisweet chocolate chips and peppermint extract. Stir the mixture until the chocolate is fully incorporated and smooth.
Next, you’ll pour the mixture into an 8×8 baking pan and refrigerate until the chocolate is firm, but not solid. Remove the pan from the refrigerator and scoop about a tablespoon of the mixture and form into balls. Set the balls onto a parchment lined baking pan and place into the freezer for about 15 minutes or so.

 Then, it’s time to dip these truffles into some more chocolate, which is my favorite part! Melt some white chocolate until smooth. Remove the truffles from the freezer and working one at a time, dip each ball into the white chocolate mixture and place back onto the baking pan. Repeat until each truffle is coated. Feel free to drizzle additional chocolate on top or even coat with crushed candy canes.

Double Chocolate Peppermint Truffles

 Total Time 1 hour 45 minutes

Ingredients

  • 3/4 cup heavy whipping cream
  • 2 cups semisweet chocolate chips
  • 2 teaspoons peppermint extract
  • 2 cups white chocolate chips

Instructions

  1. In a medium pot, bring the cream to a boil. Remove from heat and add in the semisweet chocolate chips and peppermint extract. Stir until melted and smooth.
  2. Pour mixture into an 8x8 baking pan and refrigerate until firm, but not solid, approximately 1 hour.
  3. Line a baking pan with parchment paper and set aside.
  4. Remove from refrigerator and using a tablespoon or regular spoon, scoop mixture into balls and place onto pan. Repeat with remaining chocolate.
  5. Freeze balls until set, approximately 15 minutes.
  6. While balls are in the freezer, melt white chocolate in the microwave until, stirring every 15 seconds, so mixture does not burn.
  7. Remove balls from freezer and working quickly, dip balls, one at a time, into white chocolate. Place back onto baking pan.
  8. Once chocolate is hardened, drizzle with additional semisweet chocolate, if desired.
  9. Cover and refrigerate until ready to serve.
