Bacon Wrapped Guacamole Stuffed Chicken

Bacon Wrapped Guacamole Stuffed Chicken This is a sponsored post written by me on behalf of  Weber Grills Canada .  All opinions are 100% mine. It's time to pull your grills out and celebrate summer by making these bacon wrapped guacamole stuffed chicken breasts! I took two of my favourite foods, bacon and avocado and combined them into a tasty dinner that is just begging to be grilled! Although this recipe might look a little challenging with the stuffing and the wrapping, it's actually pretty easy! You start off by pounding the chicken breasts until they are about 1/4 inch thick with a meat mallet (I have used a rolling pin to do this) and then you just place the guacamole on top of one side and roll it up. You can either wrap the bacon around the chicken one slice at a time to ensure a single layer of bacon or you can just lay a few strips of bacon out, place the chicken on one end and wrap it all up in one go. The essential thing about this recipe i

Pesto Zucchini Noodles with Roasted Tomatoes and Grilled Chicken

Pesto Zucchini Noodles with Roasted Tomatoes and Grilled Chicken It's time for another summery zucchini recipe and this time it's fresh pesto zucchini noodles with roasted tomatoes and grilled chicken! Ever since I came across the idea of zucchini noodles I have been a little obsessed with them! I mean what's not to like about them? They behave just like spaghetti noodles and they are lighter and healthier! This recipe could not be easier, you simply roast the tomatoes, grill the chicken, slice the zucchini into noodles and then toss it all in a  fresh homemade basil pesto ! In addition to being nice and light and healthy, this dish is pure summer in a bowl with the juicy roasted tomatoes bursting in your mouth balancing off the creamy pesto. The zucchini noodles can be served cool making this dish perfect for hot summer days! Omit the chicken for a vegetarian version. Feel free to serve the tomatoes fresh rather than roasting them! Grilled Jerk Shrimp and Pineapple Skewers

Grilled Jerk Shrimp and Pineapple Skewers Up next in my summer grilling adventures I head down south to the Caribbean for some grilled Jamaican jerk shrimp using a tasty homemade jerk marinade. Jamaican jerk spice comes in the form of a spice blend a paste or a marinade and its main ingredients are allspice, scotch bonnet peppers, green onions, thyme, nutmeg and garlic. I like to make my own jerk marinate from scratch and although the list of ingredients may be long it is super simple to make and you should have most of the ingredients in your pantry already. This jerk shrimp is as easy to make as marinating the shrimp in the jerk marinade, skewering it and grilling it! Jerk spice is typically on the spicy side so I like to serve it with fresh fruits or salsas, especially in the summer! The only thing that is better than fresh fruit is grilled fresh fruit so why not throw something like pineapple or peaches onto the skewer along with the shrimp for grilling? It is hard to

BERRY CHEESECAKE POPS

BERRY CHEESECAKE POPS Any of you following me on Snapchat (@gimmesomeoven) may have noticed that I had an especially smiley, giddy, total-fangirling little trip to Austin this past weekend. Guys, I went to the  Friday Night Lights  10-year reunion!!! And it was  magical .  ? It took place in Austin (Texas Forever!) out on Panther Field (where all of the football scenes were filmed) on a hot Friday night (of course).  And literally thousands of fans and most of the cast showed up to celebrate together!  I traveled there with my good friend  Maria , who is my kindred FNL-loving spirit.  And we spent the evening touring the Panther Fieldhouse (where I got to have  this  little moment), meeting some of the cast members (oh hey, Landry!), watching the cast  gather together again  for a Q&A, and getting all chocked up over a wonderful tearjerker of an episode that they played on the big screen after then sun had set.  Amazing. Of course, being that it was Texas in June,
