I can’t believe we are nearing the end of March! And Easter is less than a month away!! Where is this year going?!
Next week I’ll be sailing away on 10-day cruise. It’s sort of like my spring break. I need a break. Plus Harry’s birthday is on the first, so we’ll get to celebrate while on vacation. I’ve planned a special champagne brunch for him.
Because of this trip, we probably won’t be doing too much for Easter. I suspect we’ll just lounge around a be lazy. I might make these hot cross buns for a brunchtime snack.

When I lived close to home, my family would always go to the sunrise service then cook a large feast for lunch afterward. Being with family and enjoying good food is always the best.
Even though I won’t be in North Carolina enjoying Easter traditions with family, I’ll still make the best of the day. I’ll mix up some bunny chow and prepare this sausage egg breakfast casserole.
It’s one my favorite savory breakfasts. You know I’m not a very big breakfast person but put this casserole in front of me and I’ll quickly make it disappear.

It’s a super easy dish to put together. You can prep it the night before, pop it the refrigerator, and bake it the next morning. There is a little pre-cooking involved. The sausage needs to be cooked in advance but it doesn’t take much time to fry it up.
I like to use Odom’s Tennessee Pride® Country Sausage. The hot one is my favorite and it’s the one I use in today’s breakfast casserole. I’ve used it before to make this spicy sausage pizza.
So basically for the casserole, you need sausage, eggs, potatoes, baby spinach, and cheese. And that’s it. Maybe a little salt and pepper but that’s totally up to you.

Slice the potato thin with a mandoline and layer it in the bottom of a large casserole dish. Sprinkle the cooked sausage over the potatoes. Top the sausage with cheese and baby spinach. Then pour lightly beaten eggs over the entire thing.
You can top it with more cheese if you like. I highly suggest it!
You can either whip this entire casserole up in the morning or prep it the night before and bake it first thing the next morning. Either way, it’s going to be a smashing hit with everyone at breakfast!

Ingredients
  • 1 pound Odom’s Tennessee Pride® Country Sausage Hot
  • 12 large eggs lightly beaten
  • 2 small russet potatoes peeled and sliced thin
  • 1 cup baby spinach
  • 1 cup sharp cheddar cheeseshredded, plus more for topping
  • salt and pepper to taste

Instructions

  1. In a medium skillet, cook sausage over medium-high heat until fully cooked through, about 7 minutes. Drain off any excess grease.
  2. Preheat the oven to 375°F. Lightly coat a 2-quart casserole dish with nonstick spray. Layer the potatoes evenly in the bottom of the dish. Top the potatoes with the sausage followed by the cheese. Pour the eggs over top. Layer the spinach over the eggs and season with salt and pepper. Top with more cheese if desired.
  3. Bake for 35 to 40 minutes or until the egg has set.

Make ahead tip

  1. Prep the casserole the night before by following the instructions through step 3. Instead of baking the casserole, cover it tightly with plastic wrap. The following morning, preheat the oven and bake as directed.
  2. The unbaked casserole also freezes well. Cover tightly and freeze for up to 3 months. Thaw overnight in the refrigerator before baking. Baked as directed but you may need to increase the baking time by about 15 minutes. The center of the casserole should reach 160ºF.
  3. I don't recommend freezing the baked casserole. Cooked eggs and potatoes break down when frozen and will lose their texture.
